This is my mother's home town famous dish. Actually, I don't really know the exactly name, but I would like to call this "Ginger Egg Noodle". I love it so much. It helps blood circulation.
This dish has strong Ginger taste with old wine smell. The noodle is very fine and smooth which is a Fuzhou local food. I afraid to cook this, because it is a pressure to cook the famous dish. Although it looks oily, it is good for lady especially monthly sick. I still love to eat my mother cook of "Ginger Egg Noodle". Therefore, I used to ask mother to cook this noodle for me not myself. Tonight, I tried to cook for myself. Although, it was not strong taste as my mother's cook, I still enjoyed the noodle in front of me.
Chop Ginger for slices (a lot)
1or2 eggs (depends how much u want)
Noodle cook and wash by cold water be prepare
Firstly, Heat the pan, Pour oil. then fire ginger slices. Pour eggs and cook together. Nearly finish the eggs, pour soy sauce and old wine. Pour a little rice bowl of water and cook for while. Pour them all in the bowl which was the noodle prepared.
